Description
A fast and comforting meal pairing creamy tomato soup with a crispy, melty turkey and cheddar sandwich, ready in just 15 minutes.
Ingredients
- 2 slices whole wheat bread
- 1 tbsp butter
- 1 cup canned tomato soup
- 2 slices cheddar cheese (about 1 oz total)
- 4 slices turkey breast
- 1 tsp mayonnaise
- 1 tsp mustard
- ¼ tsp black pepper
- ¼ tsp salt
Instructions
- Heat the tomato soup in a small saucepan over medium heat, stirring occasionally. Add salt and black pepper to taste, and warm until steaming.
- While the soup heats, spread butter on one side of each bread slice. Spread mayonnaise and mustard on the unbuttered side.
- Layer turkey slices and cheddar cheese between the bread slices, keeping buttered sides facing outward.
- Place the sandwich in a skillet over medium heat. Cook for about 3 minutes on one side until golden brown, then flip and cook the other side until the bread is crispy and the cheese is melted.
- Serve the hot sandwich alongside the soup for dipping.
Notes
- Swap turkey for chicken slices or vegetables for a vegetarian option.
- Try different cheeses such as mozzarella, Swiss, or provolone.
- Use sourdough, rye, or ciabatta bread for variety.
- Experiment with other soups like mushroom or butternut squash.
- Store leftover soup in the refrigerator for up to 3 days and reheat gently.
- Store the sandwich in the fridge up to 24 hours; reheat in a skillet or oven for crispiness.
