Ingredients

  • 3 cups quick-cooking oats
  • 1/4 teaspoon salt
  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 1 cup whole milk
  • 1/4 cup unsweetened cocoa powder
  • 1 cup creamy peanut butter
  • 2 teaspoons vanilla extract

Instructions

  1. Line a baking sheet with parchment paper or wax paper and set aside.
  2. In a medium saucepan over medium heat, combine butter, sugar, milk, and cocoa powder.
  3. Stir constantly until the butter melts and the mixture begins to boil.
  4. Allow the mixture to boil for about 1 minute while stirring frequently.
  5. Remove the saucepan from heat.
  6. Stir in peanut butter, vanilla extract, and salt until smooth.
  7. Add the quick-cooking oats and mix until fully coated.
  8. Drop spoonfuls of the mixture onto the prepared parchment paper.
  9. Let the cookies sit at room temperature for 15–20 minutes until firm.
  10. Serve once the cookies have set.

  • Boiling the mixture for about one minute is important so the cookies set properly.
