Description
An easy no-bake dessert made with sweetened shredded coconut, condensed milk, and dark chocolate for a chewy coconut center coated in smooth chocolate.
Ingredients
- 2 cups sweetened shredded coconut
- 1/2 cup sweetened condensed milk
- 2 cups dark chocolate chips
Instructions
- In a large bowl mix the sweetened shredded coconut and sweetened condensed milk until evenly combined and sticky.
- Line a tray or baking sheet with parchment paper.
- Shape the coconut mixture into small rectangular bars using your hands or a small scoop.
- Place the bars on the prepared tray and freeze for 15–20 minutes until firm.
- Place the dark chocolate chips in a microwave-safe bowl.
- Microwave in 30-second intervals stirring after each interval until the chocolate is melted and smooth.
- Dip each chilled coconut bar into the melted chocolate coating all sides.
- Place the coated bars back onto the parchment-lined tray.
- Refrigerate for 10–15 minutes until the chocolate sets.
- Serve chilled or allow to sit at room temperature for a few minutes before eating.
Notes
- Chilling the bars before dipping helps them keep their shape.
- Use semi-sweet or milk chocolate for a sweeter coating if desired.
- Toast a portion of the coconut for extra flavor and texture.
- These can also be shaped into bite-sized candies instead of bars.
- Let excess chocolate drip off after dipping for a smoother finish.
