Ingredients
- 1 cup creamy peanut butter
- 1/2 cup butter, softened (salted or unsalted)
- 2 1/4 cups powdered sugar
- 1/2 teaspoon pure vanilla extract (optional)
- 1 cup melted chocolate for dipping or drizzling (optional)
Instructions
- Line a baking sheet with parchment paper and set aside.
- In a large bowl, beat together the peanut butter and softened butter until smooth and fully combined.
- Add powdered sugar and vanilla extract (if using). Mix until thick and smooth, scraping down the bowl as needed.
- Scoop about 1 tablespoon of mixture and roll into smooth balls using your hands.
- Place each ball onto the prepared baking sheet.
- Refrigerate for at least 20 minutes until firm.
- If desired, dip chilled balls into melted chocolate or drizzle chocolate on top. Let chocolate set before serving.
Notes
- Use shelf-stable creamy peanut butter for best texture.
- If mixture is too soft, chill for 10–15 minutes before rolling.
- Keep refrigerated to maintain firmness.
- Chocolate coating sets best when balls are very cold.
- Recipe doubles easily for larger batches.
