Description

Air Fryer Zucchini Fries are crispy, cheesy, and healthier than traditional fries. Coated in a flavorful Parmesan-panko crust and served with a spicy ketchup dip, they’re a quick and satisfying snack or side dish.


Ingredients

  • For the fries:
  • 3 to 4 zucchini, cut into 3-inch-by-½-inch sticks
  • ¾ cup all-purpose flour
  • 3 eggs, beaten
  • 1½ cups panko breadcrumbs
  • ¾ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • ½ teaspoon kosher salt, plus more for garnish
  • Olive oil spray (optional)
  • Dried parsley, for garnish (optional)
  • For the spicy ketchup:
  • ½ cup ketchup
  • ½ teaspoon chili powder
  • 1 teaspoon hot sauce (or more to taste)

Instructions

  1. Pat zucchini sticks dry with a clean towel.
  2. Set up a breading station: one bowl with flour, one with beaten eggs, and one with panko, Parmesan, garlic powder, and salt.
  3. Dredge each zucchini stick in flour, dip in egg, then coat in the panko mixture. Place in a single layer on a baking sheet.
  4. Preheat air fryer to 350°F (175°C). Place coated zucchini fries in the basket or on trays, working in batches if needed.
  5. Spray lightly with olive oil. Air fry for 8–10 minutes until golden and crispy.
  6. Sprinkle with extra salt and garnish with parsley if desired.
  7. For the dipping sauce, mix ketchup, chili powder, and hot sauce in a small bowl.
  8. Serve zucchini fries hot with spicy ketchup on the side.

  • Add Italian seasoning or smoked paprika to the panko for flavor variation.
  • Make gluten-free with almond flour and gluten-free breadcrumbs.
