Description

This Amish Breakfast Casserole is a comforting, hearty dish made with eggs, hash browns, and cheese. It’s perfect for breakfast, brunch, or even a cozy dinner, and comes together easily in one baking dish.

Ingredients

  • 8 large eggs
  • 2 cups milk
  • 4 cups frozen hash browns, thawed
  • 2 cups shredded cheddar cheese
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  1. Preheat oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, whisk together eggs, milk, salt, pepper, garlic powder, and onion powder until combined.
  3. Fold in thawed hash browns until evenly coated.
  4. Pour the mixture into the prepared baking dish and spread evenly.
  5. Sprinkle shredded cheddar cheese on top.
  6. Bake for 45–50 minutes, or until the center is set and the top is golden.
  7. Let rest for a few minutes before slicing and serving.

Notes

  • Let the casserole cool slightly before slicing to help it set.
  • Thaw and drain hash browns well to avoid extra moisture.
  • Add cooked veggies or pre-cooked breakfast meat for variety.
