Description
Apple Cheesecake Tacos are a fun handheld dessert made with crispy cinnamon-sugar taco shells filled with fluffy cheesecake cream and topped with warm spiced apple pie filling.
Ingredients
- 10 small flour tortillas (street taco size)
- 1/2 cup granulated sugar
- 2 teaspoons ground cinnamon
- 2 tablespoons unsalted butter, melted
- 225 g cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 2 medium apples, peeled, cored, and diced
- 2 tablespoons unsalted butter
- 3 tablespoons brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 teaspoon lemon juice
- 1 teaspoon cornstarch
- 2 tablespoons water
Instructions
- In a shallow bowl, mix the granulated sugar and ground cinnamon until evenly combined.
- Preheat the oven to 190°C (375°F). Brush both sides of each tortilla with melted butter and coat them in the cinnamon sugar mixture.
- Place tortillas between the bars of an oven rack so they hang and form taco shapes.
- Bake for 7–9 minutes until crispy and lightly golden, then remove and allow them to cool completely.
- In a saucepan over medium heat, melt the butter for the apple filling.
- Add diced apples, brown sugar, cinnamon, nutmeg, and lemon juice. Cook for 5–7 minutes until apples soften.
- Mix cornstarch and water in a small bowl, stir into the apple mixture, and cook 1–2 minutes until thickened. Let cool.
- In a mixing bowl, beat softened cream cheese until smooth.
- Add powdered sugar and vanilla extract and mix until creamy.
- In a separate bowl, whip heavy cream until stiff peaks form.
- Gently fold whipped cream into the cream cheese mixture until light and fluffy.
- Spoon or pipe cheesecake filling into each cooled taco shell.
- Top with a generous spoonful of apple filling.
- Serve immediately for best texture and flavor.
Notes
- Assemble tacos just before serving to keep the shells crisp.
- Use firm apples like Granny Smith, Honeycrisp, or Fuji for best texture.
- Drizzle caramel sauce over the apple topping for extra flavor.
- Store cheesecake filling and apple topping separately in the refrigerator for up to 3 days.
- Warm the apple filling slightly before serving for the best taste.
