Description

Apple Cheesecake Tacos are a fun handheld dessert made with crispy cinnamon-sugar taco shells filled with fluffy cheesecake cream and topped with warm spiced apple pie filling.

Ingredients

  • 10 small flour tortillas (street taco size)
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 2 tablespoons unsalted butter, melted
  • 225 g cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 2 medium apples, peeled, cored, and diced
  • 2 tablespoons unsalted butter
  • 3 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon lemon juice
  • 1 teaspoon cornstarch
  • 2 tablespoons water

Instructions

  1. In a shallow bowl, mix the granulated sugar and ground cinnamon until evenly combined.
  2. Preheat the oven to 190°C (375°F). Brush both sides of each tortilla with melted butter and coat them in the cinnamon sugar mixture.
  3. Place tortillas between the bars of an oven rack so they hang and form taco shapes.
  4. Bake for 7–9 minutes until crispy and lightly golden, then remove and allow them to cool completely.
  5. In a saucepan over medium heat, melt the butter for the apple filling.
  6. Add diced apples, brown sugar, cinnamon, nutmeg, and lemon juice. Cook for 5–7 minutes until apples soften.
  7. Mix cornstarch and water in a small bowl, stir into the apple mixture, and cook 1–2 minutes until thickened. Let cool.
  8. In a mixing bowl, beat softened cream cheese until smooth.
  9. Add powdered sugar and vanilla extract and mix until creamy.
  10. In a separate bowl, whip heavy cream until stiff peaks form.
  11. Gently fold whipped cream into the cream cheese mixture until light and fluffy.
  12. Spoon or pipe cheesecake filling into each cooled taco shell.
  13. Top with a generous spoonful of apple filling.
  14. Serve immediately for best texture and flavor.

Notes

  • Assemble tacos just before serving to keep the shells crisp.
  • Use firm apples like Granny Smith, Honeycrisp, or Fuji for best texture.
  • Drizzle caramel sauce over the apple topping for extra flavor.
  • Store cheesecake filling and apple topping separately in the refrigerator for up to 3 days.
  • Warm the apple filling slightly before serving for the best taste.
