Description

This Apple Crumble Cottage Cheese Bake combines creamy cottage cheese cheesecake, caramelized apples, and a golden oat crumble for a cozy, protein-packed dessert. It’s sweetened naturally with maple syrup, spiced with cinnamon, and perfect for breakfast, dessert, or a make-ahead treat.

Ingredients

  • Cheesecake Layer:
    • 1 ½ cups cottage cheese
    • ½ cup plain Greek yogurt
    • 3 tbsp maple syrup
    • 1 tsp vanilla bean paste
  • Apple Layer:
    • 1 medium apple, peeled and diced
    • 1 tbsp coconut oil or butter
    • 2 tbsp maple syrup
    • 1 tsp cinnamon
    • ¼ tsp nutmeg
    • Pinch of salt
  • Crumble Topping:
    • ½ cup rolled oats
    • ¼ cup almond flour
    • 2 tbsp coconut sugar
    • 2 tbsp melted coconut oil or butter
    • ½ tsp cinnamon

Instructions

  1. In a skillet, heat coconut oil over medium heat. Add diced apples, maple syrup, cinnamon, nutmeg, and salt. Cook for 5–7 minutes until soft and caramelized. Set aside.
  2. In a bowl, mix oats, almond flour, coconut sugar, melted oil, and cinnamon. Spread on a baking sheet and bake at 350°F (175°C) for 8–10 minutes, or air fry for 2–4 minutes, until golden and crisp.
  3. In a blender or food processor, blend cottage cheese, Greek yogurt, maple syrup, and vanilla until smooth and creamy.
  4. To assemble, layer crumble, apples, cheesecake base, more apples, and a final sprinkle of crumble in small jars or a dish.
  5. Chill for at least 30 minutes before serving, or enjoy warm for a cozy dessert.

Notes

  • Use dairy-free yogurt and vegan butter for a plant-based version.
  • Substitute almond flour with crushed graham crackers or oats.
  • Add chopped nuts or caramel drizzle for extra richness.
  • Store in the fridge for up to 3 days; keep crumble separate if you prefer it crispy.
  • Can be served cold, or slightly warmed for a comforting treat.
