Ingredients
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon kosher salt
- 2 teaspoons ground cinnamon
- 1/4 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 1 large egg
- 1/2 teaspoon vanilla extract
- 1/2 cup unsweetened applesauce
- 1 1/2 cups finely diced apples (Honeycrisp or Gala)
- Nonstick cooking spray
- 2 cups powdered sugar (for glaze)
- 1/3 cup + 2 tablespoons apple cider or apple juice (for glaze)
Instructions
- Preheat oven to 200°C (400°F) and grease a baking sheet with nonstick spray.
- In a medium bowl, whisk together flour, baking powder, salt, and cinnamon.
- In a large bowl, whisk melted butter and sugar until smooth. Add egg, vanilla, and applesauce, mixing until creamy.
- Gradually add dry ingredients to wet ingredients, stirring until just combined.
- Fold in diced apples evenly.
- Scoop tablespoon-sized portions onto the baking sheet, spacing them apart.
- Bake for about 10 minutes until lightly golden and set.
- Remove from oven and switch to broil on high.
- Whisk powdered sugar and apple cider to make a smooth glaze.
- Brush glaze over warm fritters and broil for 2–4 minutes until bubbling.
- Remove and brush remaining glaze on top.
- Let rest for 15 minutes to allow glaze to set before serving.
Notes
- Avoid overmixing to keep fritters soft and fluffy.
- Peel apples for a smoother texture, but leaving skin is optional.
- Add nutmeg or allspice for extra warmth.
- Broiling helps create the signature crackly glaze.
- Store in an airtight container to maintain moisture.
