A soft and moist loaf filled with cinnamon-spiced apples and brown sugar layers, finished with a sweet glaze for a comforting apple fritter flavor.
Ingredients
- 2/3 cup white sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 1/2 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour
- 1 3/4 teaspoons baking powder
- 1/2 cup milk
- 2 medium apples, peeled and chopped
- 2 tablespoons white sugar (for apples)
- 1 teaspoon cinnamon (for apples)
- 1/3 cup brown sugar
- 1 teaspoon cinnamon (for swirl)
- 1/2 cup powdered sugar
- 2–3 tablespoons milk or cream (for glaze)
Instructions
- Preheat oven to 175°C (350°F) and grease a loaf pan.
- Mix brown sugar and cinnamon for the swirl and set aside.
- Combine chopped apples with sugar and cinnamon in a bowl.
- Cream butter and sugar until smooth, then add eggs one at a time and mix well.
- Stir in vanilla extract.
- Whisk flour and baking powder in a separate bowl.
- Gradually add dry ingredients to wet ingredients, alternating with milk.
- Pour half of the batter into the pan, then add half of the apple mixture and half of the cinnamon swirl.
- Add remaining batter, then top with remaining apples and cinnamon mixture.
- Lightly swirl with a knife.
- Bake for 50–60 minutes until a toothpick comes out clean.
- Cool for 15–20 minutes, then transfer to a rack.
- Mix powdered sugar with milk and drizzle glaze over cooled bread.
Notes
- Do not overmix the batter to keep the bread soft.
- Use firm apples for best texture.
- Let bread cool before glazing to prevent melting.
- Cut apples into small pieces to avoid sinking.
- Store in an airtight container to maintain freshness.
