Description

A soft and moist loaf filled with cinnamon-spiced apples and brown sugar layers, finished with a sweet glaze for a comforting apple fritter flavor.


Ingredients

  • 2/3 cup white sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 3/4 teaspoons baking powder
  • 1/2 cup milk
  • 2 medium apples, peeled and chopped
  • 2 tablespoons white sugar (for apples)
  • 1 teaspoon cinnamon (for apples)
  • 1/3 cup brown sugar
  • 1 teaspoon cinnamon (for swirl)
  • 1/2 cup powdered sugar
  • 23 tablespoons milk or cream (for glaze)

Instructions

  1. Preheat oven to 175°C (350°F) and grease a loaf pan.
  2. Mix brown sugar and cinnamon for the swirl and set aside.
  3. Combine chopped apples with sugar and cinnamon in a bowl.
  4. Cream butter and sugar until smooth, then add eggs one at a time and mix well.
  5. Stir in vanilla extract.
  6. Whisk flour and baking powder in a separate bowl.
  7. Gradually add dry ingredients to wet ingredients, alternating with milk.
  8. Pour half of the batter into the pan, then add half of the apple mixture and half of the cinnamon swirl.
  9. Add remaining batter, then top with remaining apples and cinnamon mixture.
  10. Lightly swirl with a knife.
  11. Bake for 50–60 minutes until a toothpick comes out clean.
  12. Cool for 15–20 minutes, then transfer to a rack.
  13. Mix powdered sugar with milk and drizzle glaze over cooled bread.

  • Do not overmix the batter to keep the bread soft.
  • Use firm apples for best texture.
  • Let bread cool before glazing to prevent melting.
  • Cut apples into small pieces to avoid sinking.
