Ingredients
- 5 medium Granny Smith apples, peeled, cored, and diced (about 5 cups / 750 g)
- 1/2 cup brown sugar (100 g)
- 1 tablespoon ground cinnamon
- 1 pinch salt (1/8 tsp)
- 2 tablespoons unsalted butter (28 g)
- 2 teaspoons cornstarch mixed with 1 tablespoon water
- 2 tablespoons water
- 10 egg roll wrappers
- 8 oz (225 g) cream cheese, softened
- 1/2 cup granulated sugar (100 g)
- 1 tablespoon ground cinnamon
- 1 large egg white, lightly beaten
- 3 cups vegetable oil for frying
- Optional: caramel sauce for serving
Instructions
- Preheat oven to 400°F (200°C).
- Combine apples, brown sugar, cinnamon, salt, butter, and water in a baking dish. Toss to coat and bake 15 minutes, stirring halfway, until tender.
- Stir in cornstarch slurry, cook 1–2 minutes until thickened, then cool in freezer 10–15 minutes.
- Mix granulated sugar and cinnamon in a shallow dish; set aside.
- Place an egg roll wrapper on a clean surface. Spread 1–2 tablespoons cream cheese on the lower third, then top with 1–2 tablespoons apple filling.
- Fold bottom corner over filling, tuck in sides, roll tightly, and brush top corner with egg white to seal. Repeat for remaining wrappers.
- Heat vegetable oil to 350°F (175°C). Fry roll ups 3–4 minutes per side until golden, in batches.
- Immediately roll fried roll ups in cinnamon sugar mixture.
- Serve warm, optionally with caramel sauce.
