Description
A traditional Colombian street food featuring crispy fried maize dough stuffed with a whole egg, offering a delicious contrast of crunchy exterior and soft, savory filling.
Ingredients
- 120 g maize flour
- 240 ml water
- 5 ml salt
- 4 large eggs
- Vegetable oil for frying
Instructions
- In a bowl, mix maize flour, salt, and water until a soft, smooth dough forms.
- Divide dough into four portions, reserving a small amount for sealing.
- Roll each portion into a ball and flatten between plastic sheets to about 1/2 cm thickness.
- Heat vegetable oil in a deep pan over medium heat.
- Fry each flattened dough piece until golden and slightly puffed. Remove and let cool slightly.
- Carefully cut a small opening in each arepa.
- Crack an egg into a bowl and gently pour it into the arepa.
- Seal the opening with reserved dough, pressing lightly.
- Return arepas to hot oil and fry for 3–5 minutes until crispy and egg is cooked.
- Remove, rest briefly, and serve warm.

- Ensure dough is moist but not sticky to prevent cracking.
- Handle gently when cutting and filling to avoid breaking.
- Use neutral oil like vegetable or sunflower oil.
- Best enjoyed fresh for maximum crispiness.
