Ingredients

  • 3 1/4 cups bread flour
  • 2 teaspoons instant yeast
  • 2 teaspoons coarse salt
  • 1 1/2 cups water (room temperature)
  • Optional: cornmeal for dusting the pan

Instructions

  1. In a large bowl, combine flour, yeast, and salt.
  2. Add water and stir until a sticky, shaggy dough forms and all flour is moistened.
  3. Cover bowl and let dough rise at room temperature for 2–3 hours until doubled and bubbly.
  4. Optional: Refrigerate dough for 12–72 hours for deeper flavor.
  5. Turn dough onto a lightly floured surface, divide if desired, and gently shape into loaves.
  6. Let dough rest while preheating oven to 450°F (230°C). Place a baking stone or sheet inside to heat.
  7. Score the top of the dough, then place loaves on preheated surface (sprinkled with cornmeal if using).
  8. Bake for 20–25 minutes or until crust is golden and loaves sound hollow when tapped.
  9. Cool completely before slicing.

  • Use bread flour for best texture, but all-purpose flour can be substituted.
