Ingredients

  • For the Salad:
  • 2 cups green cabbage, shredded
  • 2 cups purple cabbage, shredded
  • 1 cup carrots, grated
  • 1 red bell pepper, thinly sliced

  • 1/2 cup cilantro, chopped
  • 1/4 cup fresh mint, chopped
  • 1/2 cup roasted cashews, chopped
  • 1 cup shredded chicken (optional)

  • Lime Ginger Dressing:
  • 3 tablespoons fresh lime juice
  • 2 tablespoons extra virgin olive oil or avocado oil
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon maple syrup
  • 1 tablespoon rice vinegar
  • 1 tablespoon low sodium soy sauce or coconut aminos
  • 1 tablespoon grated fresh ginger
  • 1 garlic clove, minced
  • 1/4 teaspoon crushed red pepper flakes
  • Black pepper to taste (optional)

Instructions

  1. Chop all vegetables and cashews finely. Combine in a large mixing bowl.
  2. In a small bowl or jar, whisk together all the dressing ingredients until fully emulsified.
