Description

A refreshing avocado toast topped with a creamy yogurt-lime spread, mashed avocado, and optional fresh toppings for a bright, quick breakfast or snack.

Ingredients

  • For the yogurt-lime spread
  • 1/2 cup vegan yogurt
  • 1 tablespoon fresh lime juice
  • 1 teaspoon lime zest
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • For the avocado toast
  • 2 slices sourdough bread or rye bread
  • 1 ripe avocado
  • 1/8 teaspoon salt
  • 1 tablespoon chopped fresh herbs such as parsley or cilantro (optional)
  • 1/4 cup cherry tomatoes, halved (optional)
  • 2 tablespoons thinly sliced radishes (optional)
  • 1/4 teaspoon chili flakes (optional)

Instructions

  1. In a small bowl, mix the vegan yogurt, lime juice, lime zest, salt, and black pepper until smooth to create the yogurt-lime spread.
  2. Toast the bread slices in a toaster or skillet over medium heat until golden and crisp.
  3. Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash with a fork until creamy but slightly chunky, then add a pinch of salt.
  4. Spread the yogurt-lime mixture evenly over the toasted bread slices.
  5. Top each slice with mashed avocado and spread gently.
  6. Add optional toppings such as cherry tomatoes, radishes, chili flakes, or fresh herbs.
  7. Serve immediately while the toast is crisp.

Notes

  • Use ripe avocados that feel slightly soft when gently pressed.
  • Adding a little lime juice to the mashed avocado can slow browning.
  • Whole grain, sourdough, or rye bread works best for texture.
  • The yogurt-lime spread can be prepared up to 2 days ahead and stored in the refrigerator.
  • Top with seeds, nuts, or roasted chickpeas for added crunch and protein.
