Description

Baked banana French toast is a comforting oven-baked breakfast casserole made with soft bread, ripe bananas, and a warm spiced custard. It’s easy to prepare and perfect for feeding a crowd on slow mornings.


Ingredients

  • 1 loaf day-old bread (about 450 g), cut into 2.5 cm cubes
  • 3 ripe bananas, sliced
  • 4 large eggs
  • 1 1/2 cups milk
  • 1/4 cup brown sugar
  • 2 tablespoons granulated sugar
  • 3 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 175°C (350°F) and lightly grease a 23 x 33 cm (9×13 inch) baking dish.
  2. Spread the cubed bread evenly in the baking dish and scatter sliced bananas over the top.
  3. In a large bowl, whisk together eggs, milk, brown sugar, granulated sugar, melted butter, vanilla extract, cinnamon, nutmeg, and salt until smooth.
  4. Pour the egg mixture evenly over the bread and bananas. Press down gently to help the bread soak up the custard.
  5. Let rest for 10 minutes to absorb the mixture.
  6. Bake uncovered for 40–45 minutes, until the top is golden and the center is set.
  7. Let cool slightly before serving.

Notes

  • Day-old bread absorbs custard better than fresh bread.
  • Try adding blueberries or chopped nuts for variety.
  • Can be assembled the night before and baked in the morning.
  • Use half cream for a richer result.
  • Great served with syrup or yogurt.
