Description
Crispy baked chicken thighs with juicy, tender meat and a perfectly seasoned caramelized crust made from simple pantry spices.
Ingredients
- 1 tablespoon Italian seasoning or dried oregano
- 2 teaspoons brown sugar
- 2 teaspoons paprika
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 teaspoon coarse kosher salt or ½ teaspoon table salt
- ½ teaspoon black pepper
- 3 pounds skin-on, bone-in chicken thighs (about 8 thighs)
- 2 tablespoons olive oil
Instructions
- Preheat oven to 400°F (200°C) and prepare a 9×13-inch baking dish or line a baking sheet with parchment paper or foil.
- In a small bowl, whisk together Italian seasoning, brown sugar, paprika, garlic powder, onion powder, salt, and black pepper.
- Pat chicken thighs completely dry with paper towels.
- Place chicken in prepared dish and rub both sides with olive oil.
- Sprinkle seasoning evenly over both sides. For deeper flavor, gently loosen skin and season underneath.
- Arrange chicken skin side up in a single layer.
- Bake uncovered for 30–40 minutes, until internal temperature reaches at least 165°F (best at 175–185°F).
- Broil for 2–3 minutes at the end for extra crispy skin, watching carefully.
- Remove from oven and rest for 5 minutes before serving.
Notes
- Boneless thighs cook 8–10 minutes faster.
- Add cayenne pepper for a spicy version.
- Use smoked paprika for a deeper smoky flavor.
- Store refrigerated up to 4 days or freeze up to 3 months.
- Reheat in oven or air fryer for crispier skin.
