Description

Ingredients

  • 3 large eggs
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons milk
  • Powdered sugar for dusting the towel
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar

  • 1 cup heavy whipping cream
  • 1 large ripe banana, mashed

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 10 x 15 inch jelly roll pan with parchment paper.
  2. In a large bowl beat the eggs with an electric mixer for about 3 minutes until light and fluffy.
  3. Gradually add granulated sugar and continue beating until pale and thick.
  4. Mix in vanilla extract and milk.
  5. In a separate bowl whisk together flour, baking powder, and salt.
  6. Gently fold the dry ingredients into the egg mixture until just combined.
  7. Spread the batter evenly into the prepared pan.
  8. Bake for 10–12 minutes until the cake springs back when lightly touched.
  9. Dust a clean kitchen towel with powdered sugar.
  10. Turn the warm cake onto the towel and carefully peel off the parchment paper.
  11. Roll the cake with the towel from the short side and allow it to cool completely.
  12. Beat the softened cream cheese until smooth.
  13. Add powdered sugar and vanilla extract and mix until creamy.
  14. In a separate bowl whip the heavy cream until stiff peaks form.
  15. Fold the whipped cream into the cream cheese mixture.
  16. Gently fold in the mashed banana.
  17. Carefully unroll the cooled cake and spread the filling evenly over the surface.
  18. Roll the cake back up without the towel and place seam-side down.
  19. Refrigerate for at least 1 hour before slicing.
  20. Dust with powdered sugar and garnish with whipped cream and banana slices if desired.
