Ingredients
- 1 lb chicken breast, cut into small bite-sized pieces
- 1 tablespoon olive oil
- ½ teaspoon smoked paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 flatbreads (such as Stonefire brand)
- ⅓ cup BBQ sauce, plus more for drizzling
- 2 cups shredded mozzarella cheese
- 1 red bell pepper, thinly sliced
- ⅛ small red onion, thinly sliced
- ¼ cup chopped fresh cilantro
Instructions
- Preheat oven to 400°F (200°C).
- Season diced chicken with paprika, garlic powder, onion powder, salt, and pepper.
- In a skillet over medium-high heat, heat olive oil and cook the chicken for 7–10 minutes until fully cooked.
- Place flatbreads on a baking sheet and brush each with BBQ sauce.
- Sprinkle mozzarella over the flatbreads, then top with bell pepper, onion, and cooked chicken.
- Bake for 10–13 minutes until golden brown and the cheese is bubbly.
- Top with chopped cilantro and a drizzle of BBQ sauce. Slice and serve warm.
