Ingredients

  • 1 lb chicken breast, cut into small bite-sized pieces
  • 1 tablespoon olive oil
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 flatbreads (such as Stonefire brand)
  • ⅓ cup BBQ sauce, plus more for drizzling
  • 2 cups shredded mozzarella cheese
  • 1 red bell pepper, thinly sliced
  • small red onion, thinly sliced
  • ¼ cup chopped fresh cilantro

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Season diced chicken with paprika, garlic powder, onion powder, salt, and pepper.
  3. In a skillet over medium-high heat, heat olive oil and cook the chicken for 7–10 minutes until fully cooked.
  4. Place flatbreads on a baking sheet and brush each with BBQ sauce.
  5. Sprinkle mozzarella over the flatbreads, then top with bell pepper, onion, and cooked chicken.
  6. Bake for 10–13 minutes until golden brown and the cheese is bubbly.
  7. Top with chopped cilantro and a drizzle of BBQ sauce. Slice and serve warm.
