Beef and Cabbage is a hearty, comforting one-pot stew made with tender beef chuck, sweet cabbage, aromatic vegetables, and savory herbs. Simmered until rich and flavorful, this dish is a wholesome, satisfying meal perfect for cooler days or cozy gatherings.
Ingredients
- 1.5 lbs beef chuck, cut into 1-inch cubes
- 1 large head of cabbage, roughly chopped
- 1 large onion, chopped
- 2 carrots, peeled and sliced
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes, undrained
- 6 cups beef broth
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- 2 tablespoons all-purpose flour (optional, for thickening)
- 2 tablespoons water (optional, for thickening)
- Fresh parsley, chopped (for garnish)
Instructions
- Season beef with salt, black pepper, and smoked paprika.
- In a large pot or Dutch oven, heat olive oil over medium-high heat. Sear beef in batches until browned. Set aside.
- In the same pot, sauté onion, carrots, and celery until softened. Add garlic and cook for 1 minute.
- Deglaze with a splash of beef broth, scraping up browned bits.
- Add seared beef back to the pot along with diced tomatoes, remaining broth, thyme, rosemary, and red pepper flakes.
- Bring to a boil, then reduce heat and simmer covered for 2 hours or until beef is tender.
- Stir in chopped cabbage and cook uncovered for another 30–45 minutes until cabbage is tender.
- If desired, mix flour and water into a slurry and stir into the stew to thicken. Simmer a few more minutes.
- Adjust seasoning to taste and garnish with fresh parsley before serving.
Notes
- Add potatoes for a heartier Irish-style stew.
- Use panko or seasoned breadcrumbs for a different texture.
- Slow cooker method: Cook on low for 6–8 hours after searing beef and sautéing veggies.
- To make gluten-free, omit flour or use a GF thickener like cornstarch.
