Description

The Beefy Melt Burrito is a hearty, cheesy, and satisfying meal made with seasoned beef, a creamy cheese sauce, and optional rice and toppings—all wrapped in a warm flour tortilla. It’s comfort food at its finest, perfect for family dinners or meal prep.


Ingredients

    • Beef Filling:
    • 1.5 lbs ground beef (80/20 blend)
    • 1 large onion, finely chopped
    • 2 cloves garlic, minced
    • 1 green bell pepper, finely chopped
    • 1 (15 oz) can diced tomatoes, undrained
    • 1 (15 oz) can tomato sauce
    • 1 (4 oz) can diced green chiles
    • 1 packet taco seasoning (or homemade)
    • 1/2 cup water
    • 1 tbsp olive oil
    • Salt and black pepper to taste

 

    • Cheese Sauce:
    • 4 tbsp butter
    • 4 tbsp all-purpose flour
    • 3 cups whole milk
    • 8 oz sharp cheddar cheese, shredded
    • 4 oz Monterey Jack cheese, shredded
    • 1/4 tsp garlic powder
    • 1/4 tsp onion powder
    • Pinch cayenne pepper (optional)
    • Salt and black pepper to taste

 

    • Burrito Assembly:
    • 6 large flour tortillas (1012 inch)
    • 1 cup cooked rice (optional)
    • 1/2 cup sour cream (optional)
    • 1/4 cup chopped green onions (optional)

 

  • Homemade Taco Seasoning (optional):
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried oregano
  • 1/4 tsp cayenne pepper (optional)
  • 1/4 tsp black pepper
  • 1/2 tsp salt

Instructions

  1. Heat olive oil in a skillet over medium heat. Add onion, garlic, and bell pepper. Cook until softened, about 5 minutes.
  2. Add ground beef, breaking it apart as it browns. Season with salt, pepper, and taco seasoning.
  3. Stir in diced tomatoes, tomato sauce, green chiles, and water. Simmer for 10–15 minutes.
  4. In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute. Gradually whisk in milk until thickened.
  5. Stir in cheeses until melted and smooth. Season with garlic powder, onion powder, cayenne, salt, and pepper.
  6. Warm tortillas. Add a portion of beef, cheese sauce, and optional rice. Roll tightly into burritos.
  7. Top with sour cream and green onions, if desired. Serve immediately or wrap for storage.
