- 3 cups whole milk

- 4 oz Monterey Jack cheese, shredded

- 1/4 tsp onion powder
- Pinch cayenne pepper (optional)
- Salt and black pepper to taste

- Burrito Assembly:
- 6 large flour tortillas (10–12 inch)
- 1 cup cooked rice (optional)
- 1/2 cup sour cream (optional)
- 1/4 cup chopped green onions (optional)
- Homemade Taco Seasoning (optional):
- 2 tbsp chili powder
- 1 tbsp ground cumin
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp dried oregano
- 1/4 tsp cayenne pepper (optional)
- 1/4 tsp black pepper
- 1/2 tsp salt
Instructions
- Heat olive oil in a skillet over medium heat. Add onion, garlic, and bell pepper. Cook until softened, about 5 minutes.
- Add ground beef, breaking it apart as it browns. Season with salt, pepper, and taco seasoning.
- Stir in diced tomatoes, tomato sauce, green chiles, and water. Simmer for 10–15 minutes.
- In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute. Gradually whisk in milk until thickened.
- Stir in cheeses until melted and smooth. Season with garlic powder, onion powder, cayenne, salt, and pepper.
- Warm tortillas. Add a portion of beef, cheese sauce, and optional rice. Roll tightly into burritos.
- Top with sour cream and green onions, if desired. Serve immediately or wrap for storage.
