Ingredients
- 6 cups fresh spinach leaves
- 1 cup fresh strawberries, sliced
- 1/2 cup fresh blueberries
- 1/4 red onion, thinly sliced
- 1/2 cup toasted pecans
- 1/2 cup crumbled feta cheese
- For the Balsamic Glaze:
- 1/2 cup balsamic vinegar
- 1–2 teaspoons honey (optional, for sweetness)
Instructions
- In a large bowl, combine spinach, strawberries, blueberries, red onion, and toasted pecans. Toss gently.
- Sprinkle crumbled feta on top.
- In a small saucepan over medium heat, simmer balsamic vinegar (and honey, if using) for about 10 minutes until reduced by half and slightly thickened. Let cool slightly.
- Drizzle balsamic glaze over the salad just before serving and toss gently.

- Add grilled chicken to turn it into a full meal.
- Substitute goat cheese or blue cheese for feta.
- Use avocado instead of cheese for a vegan version.
