These soft and moist carrot cake bars deliver all the classic flavors of traditional carrot cake in a simple, sliceable form that’s perfect for casual gatherings and easy sharing.

Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 3 large eggs
  • 3/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 3 cups finely grated carrots

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking pan with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate large bowl, whisk the eggs with the granulated and brown sugars until smooth.
  4. Stir in the vegetable oil and vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  6. Fold in the grated carrots until evenly distributed.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the bars cool completely in the pan before slicing and serving.

  • Add chopped walnuts or pecans for crunch.
  • Mix in raisins or crushed pineapple for extra sweetness and moisture.
  • Top with cream cheese frosting for a more decadent version.
  • Use a 9×13-inch pan for thinner bars or 8×8-inch for thicker bars.
