Ingredients

  • 1 tsp sugar
  • 1 cup warm water (divided)
  • 2 1/4 tsp yeast (1 packet)
  • 2 1/2 cups flour
  • 1 tsp salt

  • 4 tbsp olive oil (divided)
  • 1 (28 oz) can whole tomatoes
  • 2 tbsp olive oil
  • 1/4 cup grated onions
  • 3/4 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes
  • 3 cloves garlic, pressed
  • 2 tsp sugar
  • 1 tsp kosher salt
  • 2 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1/4 tsp Italian seasoning
  • 1/4 tsp crushed red pepper flakes

Instructions

  1. Proof yeast: In a bowl, stir sugar, ½ cup warm water, and yeast. Let sit 10 minutes until foamy.
  2. Mix dough: Combine flour, salt, and Italian seasoning. Add yeast mixture, 3 tbsp olive oil, and ½ cup warm water. Knead 5 minutes until stretchy.
  3. Rise: Brush a bowl with 1 tbsp olive oil. Place dough inside, cover, and let rise for 30 minutes.
  4. Shape: Knead lightly on a floured surface, then roll into a 12-inch circle.
  5. Preheat oven to 450°F. Oil or cornmeal-dust a pan. Place dough, add sauce and toppings.
  6. Bake for 10–12 minutes until golden.
  7. Tomato sauce: Crush tomatoes. Sauté onions, oregano, basil, and red pepper flakes in oil 3–4 minutes. Add garlic, cook 1 minute. Add tomatoes, sugar, and salt. Simmer 30 minutes.
  8. White sauce: Melt butter, sauté garlic 30 seconds. Whisk in flour, cook 1 minute. Gradually add milk and cream, whisking until smooth. Stir in Parmesan, seasoning, and red pepper flakes. Simmer until thickened.
