Ingredients
- 4 boneless, skinless chicken breasts
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 2 tablespoons olive oil
- 4 slices pepper jack cheese
For the blackberry garlic herb cream sauce:
- 1 cup fresh blackberries
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried parsley
- 1/4 teaspoon crushed red pepper flakes
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon honey
- 1 tablespoon lemon juice
- 2 tablespoons grated parmesan cheese
Instructions
- Pat chicken breasts dry and season with salt, black pepper, and paprika.
- Heat olive oil in a skillet over medium-high heat. Cook chicken 6–7 minutes per side until golden brown and cooked through (165°F internal).
- Place a slice of pepper jack cheese on each chicken breast. Cover and melt cheese for 1–2 minutes. Remove chicken and set aside.
- In the same skillet, melt butter over medium heat. Sauté garlic for 30 seconds until fragrant.
- Add chicken broth, scraping the pan to loosen browned bits.
- Stir in heavy cream, thyme, parsley, red pepper flakes, salt, and black pepper.
- Add blackberries and honey; simmer 3–4 minutes until berries release juices.
- Stir in lemon juice and parmesan; simmer 2–3 minutes until slightly thickened.
- Return chicken to skillet and spoon sauce over top. Heat together 1 minute and serve.
Notes
- Substitute mozzarella or Monterey Jack cheese for a milder flavor.
- Add extra blackberries or a spoon of blackberry jam for more sweetness.
- Use fresh herbs instead of dried for brighter flavor.
- Add vegetables like spinach or mushrooms for a heartier meal.
- Replace heavy cream with half-and-half for a lighter sauce.
