Ingredients

For the blackberry garlic herb cream sauce:

  • 1 cup fresh blackberries
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon crushed red pepper flakes
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • 2 tablespoons grated parmesan cheese

Instructions

  1. Pat chicken breasts dry and season with salt, black pepper, and paprika.
  2. Heat olive oil in a skillet over medium-high heat. Cook chicken 6–7 minutes per side until golden brown and cooked through (165°F internal).
  3. Place a slice of pepper jack cheese on each chicken breast. Cover and melt cheese for 1–2 minutes. Remove chicken and set aside.
  4. In the same skillet, melt butter over medium heat. Sauté garlic for 30 seconds until fragrant.
  5. Add chicken broth, scraping the pan to loosen browned bits.
  6. Stir in heavy cream, thyme, parsley, red pepper flakes, salt, and black pepper.
  7. Add blackberries and honey; simmer 3–4 minutes until berries release juices.
  8. Stir in lemon juice and parmesan; simmer 2–3 minutes until slightly thickened.
  9. Return chicken to skillet and spoon sauce over top. Heat together 1 minute and serve.
