Description

Ingredients

  • Crust:
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • Cheesecake Filling:
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs, room temperature
  • 1 cup sour cream
  • 2 teaspoons vanilla extract
  • 2 tablespoons all-purpose flour
  • Blueberry Topping:
  • 2 cups fresh or frozen blueberries
  • 1/3 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions

  1. Preheat oven to 325°F (165°C) and grease a 9-inch springform pan.
  2. Mix graham cracker crumbs, sugar, and melted butter. Press into bottom of the pan. Bake for 10 minutes and let cool.
  3. In a bowl, beat cream cheese until smooth. Add sugar and mix until creamy. Beat in eggs one at a time.
  4. Stir in sour cream, vanilla extract, and flour until just combined.
  5. Pour filling over crust and smooth the top. Bake for 50–55 minutes, until edges are set and center slightly jiggles.
  6. Turn off oven, crack door, and cool cheesecake inside for 1 hour. Then refrigerate for at least 4 hours or overnight.
  7. For topping: In a saucepan, combine blueberries, sugar, lemon juice, cornstarch, and water. Cook over medium heat until thick and glossy (5–7 minutes). Let cool completely.
  8. Spread cooled topping over chilled cheesecake before serving.
