Description

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder

  • 1 large egg, lightly beaten
  • 1 teaspoon pure vanilla extract
  • 3 cups fresh or frozen blueberries (thawed and drained if frozen)
  • 1/2 cup granulated sugar (for filling)
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon zest
  • 1 tablespoon freshly squeezed lemon juice

Instructions

  1. Preheat oven to 375°F (190°C) and line a 9×13-inch baking pan with parchment paper, greasing lightly.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. Add chilled butter and blend with a pastry cutter or fingers until crumbly.
  4. Stir in egg and vanilla extract until the dough begins to hold together.
  5. Press two-thirds of the dough into the bottom of the prepared pan for the crust.
  6. In a separate bowl, toss blueberries with sugar, cornstarch, lemon zest, and lemon juice.
  7. Spread the blueberry mixture evenly over the crust.
  8. Sprinkle remaining dough over the blueberries as a crumble topping.
  9. Bake for 40–45 minutes until the topping is golden and filling is bubbling.
  10. Cool completely in the pan on a wire rack. For clean slices, chill in the fridge for 30 minutes before cutting.
