A refreshing layered drink featuring sweet blueberry puree, tangy lemon, earthy matcha, and sparkling water for a fizzy, antioxidant-rich boost.
Ingredients
- 1 cup fresh or frozen blueberries
- 1–2 tbsp honey or maple syrup
- 2 tbsp lemon juice
- 2 tbsp water
- 2 tsp matcha powder
- 1/4 cup hot water (175°F)
- 1 1/2 cups sparkling water
- Ice cubes
- Fresh blueberries (for garnish)
- Lemon slice (for garnish)
- Dusting of matcha powder (optional garnish)
Instructions
- In a small saucepan, combine blueberries, honey (or maple syrup), lemon juice, and water. Cook over medium heat for 5–7 minutes until berries burst and mixture thickens. Let cool. For a smoother texture, strain through a fine mesh sieve.
- In a small bowl, whisk matcha powder with hot water (175°F) until smooth and frothy.
- Fill tall glasses with ice cubes. Add blueberry mixture to the bottom.
- Slowly pour the matcha mixture over the back of a spoon to create layers.
- Top with sparkling water and garnish with blueberries, lemon slice, and a dusting of matcha powder. Serve immediately.
Notes
- Use lemon-flavored sparkling water for extra zest.
- Add almond or coconut milk for a creamy variation.
- Chia seeds can be stirred in for extra nutrients.
- Frozen blueberries work just as well as fresh.
- Keep the blueberry layer prepped ahead of time and assemble just before serving.
