Ingredients
- For the patties:
- 1 1/2 pounds ground beef (80/20 blend)
- 1/2 cup plain breadcrumbs
- 1 large egg
- 1/4 cup whole milk
- 2 tablespoons finely chopped onion
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon Worcestershire sauce
- 1 tablespoon olive oil (for cooking)
- For the mushroom-onion gravy:
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 medium yellow onion, thinly sliced
- 8 ounces cremini or white mushrooms, sliced
- 2 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1/2 teaspoon dried thyme
- Salt and black pepper to taste
- 1 tablespoon chopped fresh parsley (optional)
Instructions
- In a large bowl, combine ground beef, breadcrumbs, egg, milk, chopped onion, garlic powder, salt, pepper, and Worcestershire sauce. Mix gently until just combined.
- Shape mixture into 4–6 oval patties about 3/4 inch thick.
- Heat olive oil in a large skillet over medium heat. Cook patties for 4–5 minutes per side until browned. Remove and set aside.
- In the same skillet, add butter and olive oil. Add sliced onions and cook 4–5 minutes until softened.
- Add mushrooms and cook 5–7 minutes until browned. Stir in garlic and cook 30 seconds.
- Sprinkle flour over vegetables and cook 1–2 minutes, stirring to remove raw flour taste.
- Gradually whisk in beef broth. Add Worcestershire sauce and thyme. Bring to a simmer.
- Return patties to skillet, spoon gravy over them, cover, and simmer 10–15 minutes until fully cooked and gravy thickens.
- Adjust seasoning with salt and pepper. Garnish with parsley if desired and serve.

- Add a splash of heavy cream for a richer gravy.
