Ingredients
- 1 tablespoon extra virgin olive oil
- 1 pound turkey breakfast sausage
- 1 medium yellow onion, diced
- 1 red bell pepper, diced
- 4 cups frozen diced hash browns, thawed
- 1½ cups freshly shredded cheddar cheese
- 2 tablespoons sliced chives
- 8 large eggs
- 1 cup whole milk
- ½ teaspoon salt
- ½ teaspoon black pepper
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish and set aside.
- Heat olive oil in a large skillet over medium heat. Cook turkey sausage until browned, then remove and set aside.
- In the same skillet, sauté the diced onion and red bell pepper for about 5 minutes until softened.
- In a large bowl, combine thawed hash browns, cooked sausage, sautéed vegetables, shredded cheddar cheese, and chives.
- In a separate bowl, whisk together eggs, milk, salt, and pepper until smooth.
- Pour the egg mixture over the hash brown mixture and stir to combine.
- Transfer the mixture to the prepared baking dish, spreading it out evenly.
- Bake for 35–40 minutes, or until the eggs are set and the top is golden brown. A toothpick inserted in the center should come out clean.
- Let the casserole rest for 5 minutes before slicing and serving.
