Description
These fluffy and golden Pancake Poppers are baked mini pancake bites, perfect for a quick breakfast or snack. Made in a muffin tin and ready in 20 minutes, they’re portable, customizable, and totally kid-approved.
Ingredients
1 cup all-purpose flour
2 tablespoons granulated sugar
2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup milk
2 large eggs
2 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
1/2 cup mix-ins (e.g., blueberries, chocolate chips, banana, or strawberries)
Instructions
- Preheat oven to 375°F (190°C) and grease a mini muffin tin.
- In a bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, whisk milk, eggs, melted butter, and vanilla extract.
- Pour wet ingredients into dry and stir until just combined (lumps are okay).
- Fold in mix-ins of choice.
- Scoop batter into muffin cups, filling about 3/4 full. Optionally, top with extra mix-ins.
- Bake for 12–15 minutes, until golden and a toothpick comes out clean.
- Cool for 5 minutes, then remove from pan and serve warm with maple syrup or powdered sugar.
Notes
- Add lemon zest and blueberries for a fresh twist.
- Try rainbow sprinkles and almond extract for birthday-style bites.
- For savory poppers, omit sugar and vanilla, and add cheese and green onions.
