Ingredients
- 7 large eggs
- 1/4 cup whole or 2% milk
- 1/4 teaspoon salt
- Pinch of black pepper
- 1 cup chopped broccoli
- 1/2 cup shredded sharp cheddar cheese
Instructions
- Preheat the oven to 350°F (175°C). Use a silicone muffin pan or line a regular muffin tin with silicone liners.
- Place chopped broccoli in a microwave-safe bowl with 1 tablespoon of water. Microwave for 1–2 minutes until tender, then drain.
- In a large bowl, whisk together eggs, milk, salt, and pepper.
- Divide the steamed broccoli and shredded cheddar evenly among the muffin cups.
- Pour the egg mixture into each cup, filling about 3/4 full.
- Bake for 22–25 minutes, until the egg bites are set and slightly golden on top.
- Cool for a few minutes before removing from the pan. Serve warm or store for later.
