Description

Ingredients

  • 7 large eggs
  • 1/4 cup whole or 2% milk
  • 1/4 teaspoon salt
  • Pinch of black pepper
  • 1 cup chopped broccoli
  • 1/2 cup shredded sharp cheddar cheese

Instructions

  1. Preheat the oven to 350°F (175°C). Use a silicone muffin pan or line a regular muffin tin with silicone liners.
  2. Place chopped broccoli in a microwave-safe bowl with 1 tablespoon of water. Microwave for 1–2 minutes until tender, then drain.
  3. In a large bowl, whisk together eggs, milk, salt, and pepper.
  4. Divide the steamed broccoli and shredded cheddar evenly among the muffin cups.
  5. Pour the egg mixture into each cup, filling about 3/4 full.
  6. Bake for 22–25 minutes, until the egg bites are set and slightly golden on top.
  7. Cool for a few minutes before removing from the pan. Serve warm or store for later.
