Ingredients
- 3 medium ripe bananas, mashed (about 1 cup)
- 1 cup granulated sugar
- 1/2 cup plain Greek yogurt or sour cream
- 1/2 cup unsalted butter
- 2 large eggs
- 1/3 cup buttermilk
- 1 teaspoon vanilla extract
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup semi-sweet chocolate chips (optional)
Instructions
- Preheat the oven to 325°F (163°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- Place the butter in a small saucepan over medium heat. Melt and cook while stirring occasionally until it foams and turns golden brown with a nutty aroma. Remove from heat.
- Transfer the browned butter to a large mixing bowl and add the mashed bananas, sugar, Greek yogurt, eggs, buttermilk, and vanilla extract. Mix until smooth.
- Add the flour, baking soda, and salt to the bowl.
- Stir gently with a spatula or wooden spoon until the dry ingredients are just incorporated. Avoid overmixing.
- Fold in the chocolate chips if using.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 50–60 minutes or until a toothpick inserted into the center comes out clean or with a few crumbs.
- Allow the bread to cool in the pan for 10–15 minutes before transferring to a wire rack.
- Slice and serve once slightly cooled.
