Description

Bubble Pillow Potatoes are crispy, golden bite-sized potato puffs with a fluffy, creamy center. Made from a simple potato dough and fried, air-fried, or baked, they’re an easy and irresistible snack perfect for dipping.


Ingredients

  • 14 ounces russet potato (about 1 large), peeled
  • 1/4 cup all-purpose flour (spooned and leveled)
  • 2 tablespoons cornstarch
  • 1/2 teaspoon kosher salt
  • 1/8 teaspoon black pepper (or to taste)
  • Neutral frying oil (sunflower, canola, or vegetable), enough for 2–3 inches in a pot
  • Optional (for air fryer/oven): 1/2 to 1 cup breadcrumbs
  • Optional add-ins: 1/4 cup grated Parmesan cheese
  • 23 ounces low-moisture mozzarella, cut into small cubes

Instructions

  1. Cut the peeled potato into 1-inch pieces. Place in a pot, cover with water, and boil 10–15 minutes until fork-tender.
  2. Drain thoroughly and mash until completely smooth.
  3. Add flour, cornstarch, salt, and black pepper. Mix gently until a soft dough forms. Do not overmix.
  4. Heat 2–3 inches of oil to 325°F (165°C).
  5. Scoop about 1 1/2 tablespoons of dough and carefully drop into hot oil. Fry 6–8 minutes, turning occasionally, until golden brown and crisp.
  6. Remove with a slotted spoon and drain on paper towels. Lightly salt if desired and serve hot.
  7. Air fryer: Shape into balls, coat in breadcrumbs, spray with oil, and air fry at 400°F (200°C) for 15–17 minutes.
  8. Oven: Bread, spray with oil, and bake at 425°F (220°C) for about 25 minutes, flipping once.

Notes

  • Drain potatoes very well to prevent the dough from becoming too wet.
  • Maintain oil temperature around 325°F for best texture.
  • Avoid overcrowding the pot while frying.
  • Mix dough just until combined to prevent gumminess.
