Buffalo Chicken Potato Skins are crispy baked potato shells filled with tender shredded buffalo chicken, melted cheddar cheese, and topped with fresh carrots, celery, and creamy blue cheese dressing for a bold and satisfying appetizer.
Ingredients
- 6 medium Idaho or russet potatoes (about 12 ounces each)
- Cooking spray or olive oil spray
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- For the chicken filling:
- 12 ounces boneless skinless chicken breast or tenderloins
- 1 rib celery, cut into large chunks
- 1 garlic clove, smashed
- 16 ounces low sodium chicken broth (plus water if needed)
- 1/3 cup hot cayenne pepper sauce
- For the toppings:
- 12 tablespoons shredded cheddar cheese (about 3/4 cup)
- 1/2 cup carrots, cut into matchsticks
- 1 large celery rib, cut into matchsticks
- 1/4 cup blue cheese dressing
Instructions
- Place chicken, celery chunks, garlic, and broth in a slow cooker. Add water if needed to cover chicken.
- Cook on high for 4 hours or low for 6 hours until chicken is tender.
- Remove chicken and reserve 1/2 cup cooking broth. Shred chicken and return to slow cooker with reserved broth and hot sauce. Cook 30 minutes more.
- Pierce potatoes and microwave about 5 minutes until tender, or bake at 400°F for 45–60 minutes.
- Cool slightly, slice in half lengthwise, and scoop out flesh leaving 1/4 inch border.
- Preheat oven to 450°F. Spray skins with oil, season with salt and pepper, and bake 10 minutes until crisp.
- Fill each skin with about 2 tablespoons buffalo chicken and 1 tablespoon shredded cheddar.
- Bake 5 minutes until cheese melts.
- Top with blue cheese dressing, carrot matchsticks, and celery matchsticks. Serve immediately.
