Description
This Buffalo Chicken Sweet Potato Casserole features spicy buffalo chicken, tender roasted sweet potatoes, broccoli, and melted cheddar cheese—all baked in one hearty, flavor-packed dish.
Ingredients
- 2 tbsp olive oil
- Salt and pepper, to taste
- 4 cups sweet potatoes, peeled and cubed
- 2 large chicken breasts, cubed
- 2 cups broccoli florets
- 1/2 cup buffalo sauce
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp paprika
- 1 cup shredded cheddar cheese
- 2 green onions, chopped
- Optional: ranch or blue cheese dressing for drizzling
Instructions
- Preheat oven to 425°F (220°C). Lightly grease a 9×13-inch baking dish.
- In a bowl, mix buffalo sauce, olive oil, garlic powder, onion powder, paprika, salt, and pepper.
- Toss cubed sweet potatoes with half of the sauce mixture and spread in prepared dish. Roast for 30 minutes, stirring halfway.
- Toss chicken and broccoli with remaining sauce mixture.
- Layer chicken and broccoli over sweet potatoes. Bake for 20–25 minutes, until chicken is cooked and veggies are tender.
- Sprinkle with cheddar cheese and green onions. Bake for 5–10 more minutes, until cheese is melted and bubbly.
- Let rest a few minutes before serving. Drizzle with ranch or blue cheese if desired.
