Description

Ingredients

  • 1 medium head of cabbage, chopped (about 8 cups)
  • 1 large onion, chopped
  • 2 large carrots, peeled and sliced
  • 3 stalks celery, chopped
  • 2 bell peppers, chopped (any color)
  • 3 cloves garlic, minced
  • 1 can (28 oz) diced tomatoes with juice
  • 8 cups low-sodium vegetable broth (or chicken broth)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon red pepper flakes (optional)
  • 1 tablespoon olive oil (optional)
  • Salt and black pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, carrots, celery, and bell peppers. Sauté for 5 minutes.
  2. Add garlic and cook for 1 minute, stirring.
  3. Stir in chopped cabbage and cook for 5 more minutes until slightly wilted.
  4. Add diced tomatoes, broth, oregano, basil, red pepper flakes, salt, and pepper. Stir well.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for 25–30 minutes until vegetables are tender.
  6. Optional: simmer uncovered for 10 more minutes to intensify flavor.
  7. Taste and adjust seasoning. Serve warm.
