Ingredients
- 1 medium head of cabbage, chopped (about 8 cups)
- 1 large onion, chopped
- 2 large carrots, peeled and sliced

- 3 cloves garlic, minced
- 1 can (28 oz) diced tomatoes with juice
- 8 cups low-sodium vegetable broth (or chicken broth)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- ½ teaspoon red pepper flakes (optional)
- 1 tablespoon olive oil (optional)
- Salt and black pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add onion, carrots, celery, and bell peppers. Sauté for 5 minutes.
- Add garlic and cook for 1 minute, stirring.
- Stir in chopped cabbage and cook for 5 more minutes until slightly wilted.
- Add diced tomatoes, broth, oregano, basil, red pepper flakes, salt, and pepper. Stir well.
- Bring to a boil, then reduce heat to low. Cover and simmer for 25–30 minutes until vegetables are tender.
- Optional: simmer uncovered for 10 more minutes to intensify flavor.
- Taste and adjust seasoning. Serve warm.
