Description

A rich and creamy Cajun potato soup made with smoky andouille sausage, tender potatoes, bold spices, and melted cheddar cheese for a hearty and comforting meal.


Ingredients

  • 1 tablespoon vegetable oil
  • 13.5 ounces andouille sausage, sliced into ¼-inch rounds
  • 1 large onion, diced (about 1 cup)
  • ½ cup diced celery (about 1 rib)
  • ½ red bell pepper, seeded and diced
  • 2 teaspoons garlic, minced
  • 1 teaspoon Cajun seasoning
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ¼ teaspoon cayenne pepper
  • 4 cups (960 g) chicken broth
  • 4 large russet potatoes, peeled and cubed (about 2 pounds)
  • ½ cup (119 g) heavy whipping cream
  • 1 cup (113 g) mild cheddar cheese, shredded
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Add sliced andouille sausage and cook 3–4 minutes until browned. Remove and set aside.
  2. In the same pot, add onion, celery, and red bell pepper. Cook 5–8 minutes until softened. Add garlic and cook 1 minute more.
  3. Stir in Cajun seasoning, salt, black pepper, paprika, and cayenne pepper.
  4. Pour in chicken broth and add cubed potatoes. Bring to a gentle simmer and cook 20–25 minutes until potatoes are fork-tender.
  5. Return sausage to the pot. Stir in heavy cream and shredded cheddar cheese.
  6. Simmer 5 minutes, stirring occasionally, until cheese is melted and soup is heated through.
  7. Taste and adjust seasoning if needed. Garnish with chopped parsley and serve warm.

Notes

  • Reduce cayenne and Cajun seasoning for a milder version.
