Description

A refreshing, dairy-free frozen dessert made with sweet pineapple, citrus juices, and a smooth, creamy texture that mimics classic soft-serve.

Ingredients

  • 2 cups frozen pineapple chunks
  • 2 tablespoons lemon juice
  • 2 tablespoons lime juice
  • 2 to 4 tablespoons honey or sugar
  • 1/4 to 1/2 cup coconut milk or cold water
  • 1 teaspoon vanilla extract (optional)
  • Pinch of salt

Instructions

  1. Place frozen pineapple chunks in a blender or food processor.
  2. Add lemon juice and lime juice.
  3. Add honey or sugar to taste.
  4. Pour in 1/4 cup coconut milk or water and adjust as needed.
  5. Add vanilla extract and a pinch of salt.
  6. Blend until smooth and creamy, scraping down sides as needed.
  7. Serve immediately for soft-serve texture or freeze for 20–30 minutes for a firmer consistency.

Notes

  • Use coconut milk for a creamier texture or water for a lighter option.
  • Add mango or banana for a tropical variation.
  • Let frozen leftovers sit at room temperature before serving.
  • Re-blend frozen mixture with a splash of liquid if needed.
  • Fresh citrus juice gives the best flavor.
  • Use less liquid for a thicker consistency.
