Description

Ingredients

  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Zest of 1 orange
  • 1 cup ricotta cheese, well drained
  • ½ cup powdered sugar
  • ½ teaspoon vanilla extract (for filling)
  • ¼ cup mini chocolate chips
  • 2 tablespoons powdered sugar, for dusting

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, mix flour, baking powder, salt, and cinnamon.
  3. In a separate bowl, cream butter and granulated sugar until smooth and fluffy.
  4. Add egg, vanilla extract, and orange zest to the butter mixture and mix until combined.
  5. Gradually add dry ingredients and mix until a soft dough forms.
  6. Scoop tablespoon-sized portions of dough onto baking sheets and flatten gently.
  7. Bake for 10–12 minutes, until edges are lightly golden. Cool completely on a wire rack.
  8. Mix ricotta, powdered sugar, and vanilla extract until smooth, then fold in mini chocolate chips.
  9. Spread or pipe filling onto the flat side of one cookie and top with another to make a sandwich.
  10. Dust tops with powdered sugar before serving.
