Ingredients
- 3 cups apples, peeled, cored, and finely diced
- ⅓ cup brown sugar

- ¼ cup caramel sauce (for apple layer)
- 2 cups crushed vanilla wafer cookies
- ¼ cup melted butter (for crust)
- 1 package (3.4 oz) instant vanilla pudding mix
- 1¼ cups cold whole milk
- ½ cup caramel sauce (for mousse)
- 1 cup heavy whipping cream
- Extra caramel sauce for drizzling (optional)
Instructions
- In a saucepan over medium heat, cook apples with brown sugar, butter, and cinnamon for 8–10 minutes until soft and syrupy. Stir in caramel sauce and let cool completely.
- Mix crushed vanilla wafers with melted butter. Press mixture into bottoms of mini dessert cups to form crust layer.
- In a bowl, whisk pudding mix with cold milk until thickened. Stir in caramel sauce, then fold in whipped heavy cream until smooth and fluffy.
- Spoon mousse over crust layer in each cup. Top with cooled caramel apple mixture.
- Drizzle extra caramel sauce on top, if desired. Chill for at least 2 hours before serving.
