Description

Ingredients

  • 3 cups apples, peeled, cored, and finely diced

  • 2 cups crushed vanilla wafer cookies
  • ¼ cup melted butter (for crust)
  • 1 package (3.4 oz) instant vanilla pudding mix
  • 1¼ cups cold whole milk
  • ½ cup caramel sauce (for mousse)
  • 1 cup heavy whipping cream
  • Extra caramel sauce for drizzling (optional)

Instructions

  1. In a saucepan over medium heat, cook apples with brown sugar, butter, and cinnamon for 8–10 minutes until soft and syrupy. Stir in caramel sauce and let cool completely.
  2. Mix crushed vanilla wafers with melted butter. Press mixture into bottoms of mini dessert cups to form crust layer.
  3. In a bowl, whisk pudding mix with cold milk until thickened. Stir in caramel sauce, then fold in whipped heavy cream until smooth and fluffy.
  4. Spoon mousse over crust layer in each cup. Top with cooled caramel apple mixture.
  5. Drizzle extra caramel sauce on top, if desired. Chill for at least 2 hours before serving.
