Description

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 egg
  • For the cheesecake filling:
  • 4 oz cream cheese, softened
  • 2 tablespoons powdered sugar
  • 1/4 teaspoon vanilla extract
  • For the topping:
  • Caramel sauce, for drizzling

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking soda, salt, and cinnamon.
  3. In a separate bowl, cream butter with granulated and brown sugar until light and fluffy. Add egg and vanilla, and mix until combined.
  4. Gradually add dry ingredients to wet mixture and mix until soft dough forms.
  5. In a small bowl, mix cream cheese, powdered sugar, and vanilla until smooth.
  6. Scoop a tablespoon of cookie dough, flatten slightly, and place a small spoonful of cream cheese filling in the center. Wrap dough around filling and roll into a ball. Repeat with remaining dough.
  7. Place on prepared baking sheet and bake for 10–12 minutes or until edges are golden and centers set.
  8. Cool on the tray for 5–10 minutes, then drizzle with caramel sauce before serving.
