  • 1/2 cup finely chopped pecans (for coating)
  • 1/4 cup shredded coconut (for coating)
  • 1/4 cup crushed graham crackers (for coating)

  • Vanilla wafers, for serving
  • Apple slices, for serving

Instructions

  1. In a large mixing bowl, beat the softened cream cheese and butter with an electric mixer until smooth and creamy.
  2. Add powdered sugar, brown sugar, vanilla extract, cinnamon, nutmeg, and ginger. Beat until fully combined and fluffy.
  3. Fold in shredded carrots, chopped pecans, coconut, and crushed graham crackers until evenly distributed.
  4. Cover the mixture and refrigerate for about 1 hour to firm up.
  5. Transfer the chilled mixture onto plastic wrap and shape it into a ball.
  6. In a shallow bowl, mix the chopped pecans, coconut, and crushed graham crackers for the coating.
  7. Roll the cheeseball in the coating mixture until fully covered.
  8. Wrap and refrigerate again for at least 1 hour to firm up.
