A hearty, cheesy breakfast casserole layered with savory chicken or turkey sausage, vegetables, fluffy eggs, and topped with golden cheddar bay biscuits. Perfect for feeding a crowd or meal prepping for the week.
Ingredients
- 1 lb chicken or turkey breakfast sausage (crumbled)
- 1 cup diced bell peppers (red or green)
- 1/2 cup diced onion
- 2 cups shredded sharp cheddar cheese (divided)
- 8 large eggs
- 1 cup milk or half-and-half
- 1 (11–12 oz) box cheddar bay biscuit mix (with herb-butter seasoning packet)
- 1/3 cup water or milk (for biscuit mix)
- 1/4 cup melted butter (for herb topping)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika (optional)
- Cooking spray for baking dish
Instructions
- Preheat oven to 375°F (190°C) and spray a 9×13-inch baking dish with cooking spray.
- Cook sausage in a skillet until browned. Add peppers and onions; sauté until softened. Transfer mixture to baking dish.
- Sprinkle 1 cup cheddar over sausage mix.
- Whisk eggs with milk, salt, pepper, and paprika. Pour over sausage layer. Top with remaining cheese.
- Prepare biscuit mix with water or milk as directed on package. Drop spoonfuls over the egg mixture.
- Bake for 30–35 minutes or until eggs are set and biscuits are golden.
- Mix herb seasoning with melted butter and brush over baked biscuit topping.
- Let rest for 5–10 minutes before serving.

- Use pepper jack for extra spice or a cheese blend for more flavor.
- Substitute dairy-free cheese if needed.
