Ingredients
- 17 egg roll wrappers
- 1 lb (450 g) ground beef (80/20)
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- 1 tablespoon olive oil
- 1 cup (100 g) shredded cheddar cheese
- 1/2 cup (75 g) finely diced dill pickles
- 1/4 cup (40 g) finely diced onion
- 1 tablespoon ketchup
- 1 tablespoon yellow mustard
- 1 egg, beaten (for sealing)
- About 4 cups vegetable oil (for frying)
- 1/2 cup (120 g) mayonnaise
- 2 tablespoons ketchup (for sauce)
- 1 tablespoon yellow mustard (for sauce)
- 1 tablespoon finely chopped dill pickles or relish (for sauce)
- 1 teaspoon white vinegar
- 1/2 teaspoon garlic powder (for sauce)
- 1/2 teaspoon paprika (for sauce)
Instructions
- Heat olive oil in a skillet over medium heat. Add diced onion and cook 2–3 minutes until softened.
- Add ground beef and cook 6–8 minutes, breaking apart, until browned.
- Season with salt, pepper, garlic powder, onion powder, and paprika. Stir well.
- Drain excess grease. Stir in ketchup and mustard, then remove from heat and cool slightly.
- Fold in shredded cheddar cheese and diced pickles.
- Place an egg roll wrapper in a diamond shape. Add 2–3 tablespoons filling to the center.
- Fold bottom corner over filling, fold in sides, and roll tightly. Brush top corner with beaten egg to seal. Repeat with remaining wrappers.
- Heat oil to 350°F (175°C). Fry egg rolls in batches for 3–4 minutes until golden and crispy.
- Drain on paper towels.
- Prepare dipping sauce by whisking mayonnaise, ketchup, mustard, pickles, vinegar, garlic powder, and paprika until smooth.
- Serve egg rolls warm with dipping sauce.
