Description

Cheesy beef and potato burritos are hearty, comforting wraps filled with seasoned ground beef, crispy potatoes, and melty cheese, perfect for family meals, meal prep, or casual dinners.


Ingredients

  • For the potatoes:
  • 3 large potatoes (about 750 g), peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • For the beef filling:
  • 500 g ground beef
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • For assembly:
  • 1 1/2 cups nacho-style cheese sauce or melted cheddar cheese
  • 6 large flour tortillas (10-inch / 25 cm)
  • 1 tablespoon butter or olive oil (for toasting burritos)

Instructions

  1. Preheat oven to 220°C or air fryer to 200°C. Toss cubed potatoes with olive oil, salt, pepper, garlic powder, and paprika. Bake or air fry for 20–25 minutes until crispy, flipping halfway through.
  2. While potatoes cook, heat oil in a skillet over medium heat. Sauté onion for 3–4 minutes until soft. Add garlic and cook for 30 seconds.
  3. Add ground beef and cook until browned, breaking it apart. Season with salt, pepper, paprika, and cumin. Cook 2 more minutes and remove from heat.
  4. Warm tortillas for easier rolling. Add beef, crispy potatoes, and drizzle with cheese sauce. Fold sides in and roll tightly.
  5. Heat a clean skillet over medium heat. Lightly grease with butter or oil and toast burritos seam-side down for 2–3 minutes per side until golden and crisp.

Notes

  • Use frozen diced potatoes as a shortcut if needed.
  • Customize with vegetables like peppers or mushrooms.
  • To make ahead, assemble and refrigerate burritos before toasting.
  • For extra crispness, bake instead of pan-toasting.
