Ingredients
1 crusty loaf of bread (sourdough, rustic Italian, or French boule, about 14–16 oz)
1/2 cup melted salted butter (or unsalted with a pinch of salt)
2 large cloves garlic, minced (about 1½–2 tsp)
2 tbsp chopped fresh herbs (rosemary, Italian parsley, or a mix)
1 cup shredded mozzarella cheese (more if desired)
Instructions
- Preheat oven to 375°F (190°C) or set air fryer to 375°F.
- Using a sharp serrated knife, make diagonal cuts about ¾”–1″ apart across the loaf without cutting all the way through. Rotate loaf and make crosscuts forming a diamond grid.
- Mix melted butter, minced garlic, and chopped herbs.
- Drizzle garlic butter mixture generously into the cuts.
- Stuff shredded mozzarella evenly into each crease.
- Wrap loaf in foil and bake in oven for 15 minutes.
- Unwrap foil and bake an additional 5–10 minutes until top is crispy and cheese is melted. For air fryer, bake 8–10 minutes at 375°F.
- Let rest briefly before pulling apart and serving.
