Ingredients

1 lb ground beef

1 tbsp olive oil

1 medium onion, chopped

2 cloves garlic, minced

3 medium potatoes, peeled and diced

1 tsp salt

½ tsp black pepper

1 tsp paprika

½ tsp dried oregano

1 cup shredded cheddar cheese

½ cup beef broth

1 tbsp fresh parsley, chopped


Instructions

  1. Heat oil in a large skillet over medium heat. Brown the ground beef, breaking it up as it cooks.
  2. Add onion and garlic; cook until onion softens, about 3–4 minutes.
  3. Stir in diced potatoes and season with salt, pepper, paprika, and oregano.
  4. Pour in beef broth, cover, and simmer on low for 20–25 minutes until potatoes are tender.
  5. Sprinkle cheddar cheese over the top, cover again, and cook 2–3 minutes until cheese melts and bubbles.
