Ingredients
- 1 lb ground beef
- 4 cups potatoes, peeled and diced
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup milk
- 1 cup heavy cream
- 1.5 cups shredded cheddar cheese
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- Salt, to taste
- Black pepper, to taste
- Paprika or dried parsley, optional for garnish
Instructions
- In a large pot over medium heat, brown the ground beef until fully cooked. Drain excess grease and set beef aside.
- In the same pot, melt butter and add chopped onion. Cook until softened, about 3–4 minutes. Stir in minced garlic and cook for 30 seconds.
- Sprinkle in flour and stir constantly to form a roux.
- Gradually pour in chicken broth, whisking to keep the mixture smooth.
- Add diced potatoes, bring to a gentle boil, then reduce heat and simmer until potatoes are tender, about 15–20 minutes.
- Return the cooked beef to the pot. Stir in milk and heavy cream, then season with salt and pepper to taste.
- Gradually mix in shredded cheddar cheese, stirring until melted and smooth.
- Simmer for another 5 minutes, then serve hot. Garnish with paprika or dried parsley if desired.
