Ingredients

  • 2 cups (about 300 g) frozen tater tots
  • 1 cup (100 g) shredded cheddar cheese
  • 1 cup (100 g) shredded mozzarella cheese
  • 4 large flour tortillas (10-inch)
  • Seasoning and Sauce:
  • 1 tablespoon olive oil
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup (120 ml) chipotle sauce or smoky taco sauce
  • Optional Toppings:
  • 1/4 cup sour cream
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup diced tomatoes

Instructions

  1. Preheat oven to 425°F (220°C). Bake tater tots for 20–25 minutes until golden and crispy. Set aside.
  2. Heat olive oil in a skillet over medium heat. Cook diced onion 3–4 minutes until softened. Add garlic and cook 30 seconds.
  3. Add ground beef and cook 6–8 minutes until browned. Drain excess fat if needed.
  4. Season beef with chili powder, cumin, smoked paprika, salt, and pepper. Cook 1–2 minutes more.
  5. Warm tortillas slightly to make them pliable.
  6. Spread chipotle sauce in the center of each tortilla. Add seasoned beef, crispy tater tots, and both cheeses.
  7. Fold sides inward and roll tightly into burritos.
  8. For extra crispiness, cook burritos seam-side down in a skillet over medium heat for 2–3 minutes per side until golden.
  9. Serve warm with optional toppings.
