- 1 cup (100 g) shredded cheddar cheese
- 1 cup (100 g) shredded mozzarella cheese
- 4 large flour tortillas (10-inch)
- Seasoning and Sauce:
- 1 tablespoon olive oil
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup (120 ml) chipotle sauce or smoky taco sauce
- Optional Toppings:
- 1/4 cup sour cream
- 1/4 cup chopped fresh cilantro
- 1/2 cup diced tomatoes
Instructions
- Preheat oven to 425°F (220°C). Bake tater tots for 20–25 minutes until golden and crispy. Set aside.
- Heat olive oil in a skillet over medium heat. Cook diced onion 3–4 minutes until softened. Add garlic and cook 30 seconds.
- Add ground beef and cook 6–8 minutes until browned. Drain excess fat if needed.
- Season beef with chili powder, cumin, smoked paprika, salt, and pepper. Cook 1–2 minutes more.
- Warm tortillas slightly to make them pliable.
- Spread chipotle sauce in the center of each tortilla. Add seasoned beef, crispy tater tots, and both cheeses.
- Fold sides inward and roll tightly into burritos.
- For extra crispiness, cook burritos seam-side down in a skillet over medium heat for 2–3 minutes per side until golden.
- Serve warm with optional toppings.
